Our Abgoosht recipe brings the taste of tradition and home to your table. And at Santoor, you can enjoy it any day!
Abgoosht, also known as Dizi, is one of Persia's oldest dishes. It mixes hearty lamb, beans and spices. At Santoor, we cook this stew the old way. So why not try it at home too?
Ingredients for Abgoosht (serves 4)
- 500 g lamb on the bone (e.g. shank)
- 1 cup chickpeas (soaked overnight)
- 1 cup white beans (soaked overnight)
- 3 medium potatoes
- 2 medium tomatoes
- 1 large onion
- 2–3 garlic cloves
- 2 tbsp tomato paste
- Salt, pepper, turmeric and lemon juice to taste
- 1–2 dried limes (Limoo Amani, optional)
Santoor tips for perfect Abgoosht
- First of all, dried limes give the dish its special taste.
- In addition, tomato paste adds a deep red colour.
- We like to serve the stew with pickles, raw onion and yoghurt.
Step-by-step method
Preparation
First, rinse the soaked chickpeas and beans and drain them. Then peel the potatoes and cut them into large pieces.
Brown the meat
Fry the onion in a little oil until golden. Next, add the turmeric and the meat and brown it lightly.
Add the ingredients
Now add the tomatoes, garlic and tomato paste and fry briefly. After that, add the chickpeas, beans, potatoes and dried limes. Finally, pour in enough water to cover everything.
Cook
Let the stew simmer over medium heat for about 2–3 hours until the meat is soft. Meanwhile, check the water level from time to time and top up if needed.
Season
Shortly before serving, season with salt, pepper and a squeeze of lemon juice.
Serve
Abgoosht is served in two parts. First, pour off the broth and eat it with Persian flatbread and fresh herbs (sabzi khordan). Then mash the meat and pulses in a separate bowl into a hearty paste called goosht koobideh.
